Vegetarian Cheeseburger Stuffed Mushrooms

Ingredients
  

  • 12 portobello mushrooms cleaned and stems removed
  • ½ cup fresh tomatoes diced
  • ½ cup pickles diced
  • ¼ cup Mozzarella cheese shredded
  • 2 slices American cheese chopped
  • 1 cup plain bread crumbs
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp avocado oil

Burger Sauce

  • 1 cup Mayonnaise
  • ½ cup Ketchup
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Vinegar
  • 1 tbsp Pickles minced
  • 1 tbsp Papkrika
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions
 

  • Preheat your air fryer to 370°F.
  • Clean the mushroom caps, remove and discard the stems.

  • Mix together bread crumbs, and spices in a medium bowl.
    1 cup plain bread crumbs, 1 tbsp paprika, 1 tsp salt, 1 tsp pepper, 2 tbsp garlic powder, 1 tbsp onion powder
  • Add shredded mozzarella cheese and chopped American cheese.
    ¼ cup Mozzarella cheese, 2 slices American cheese
  • Next, add diced pickles, tomatoes and avocado oil. Stir the filling together until mixed, then stuff the mushrooms with the filling.
    ½ cup fresh tomatoes, ½ cup pickles, 1 tbsp avocado oil
  • Place the mushrooms on air fryer trays or in the basket, spaced apart so they are not touching. Spray the tops of the mushrooms with cooking spray and cook for 8 minutes or until golden brown and tender.
  • Meanwhile, prepare your burger sauce. In a medium container with lid, or bowl, combine burger sauce ingredients. Mix together mayonnaise, ketchup, Worcestershire sauce, vinegar, minced pickles, paprika, salt and pepper.

  • Lastly, remove the cheeseburger stuffed mushrooms from the air fryer and serve with the burger sauce. You can drizzle the sauce on top or along side as a dipping sauce.

Notes

  • The burger sauce can be made ahead and put into the refrigerator to rest for an hour or more before enjoying. The longer it sits the more the flavors will meld together.
  • Alternative cooking methods: Bake in the oven at 350 degrees F for about 20 minutes. Cook on the grill with indirect heat at 375°F for 15-20 minutes. Air fry at 370°F for 8 minutes.
  • Stuffed mushrooms are very versatile and can be a wonderful vessel to many different flavor combinations.
